Sweet Potato and Thyme Soup

Ingredients
470g (16oz) Sweet potato, peeled and chopped 1 Small brown onion 4 Cups (1 ¾ pints) chicken or veg stock 2 tsp Thyme leaves 1 tsp Dijon mustard ¼ Single cream Sea salt and cracked pepper Directions
Place sweet potato, stock, thyme and mustard in a large saucepan over medium heat. Simmer for 8 mins or until sweet potato is soft. Puree the soup with a stick mixer or in a blender until smooth. Return to heat and stir though the cream and salt and pepper. Serve in bowls. Tips: For a smoother soup pass though strainer before serving.
