Sweet Potato and Thyme Soup

Sweet Potato and Thyme Soup

Ingredients

  • 470g (16oz) Sweet potato, peeled and chopped
  • 1 Small brown onion
  • 4 Cups (1 ¾ pints) chicken or veg stock
  • 2 tsp Thyme leaves
  • 1 tsp Dijon mustard
  • ¼ Single cream
  • Sea salt and cracked pepper
  • Directions

  • Place sweet potato, stock, thyme and mustard in a large saucepan over medium heat.
  • Simmer for 8 mins or until sweet potato is soft.
  • Puree the soup with a stick mixer or in a blender until smooth. Return to heat and stir though the cream and salt and pepper.
  • Serve in bowls.
  • Tips: For a smoother soup pass though strainer before serving.
