Ocean Trout with Rustic Green Sauce

Ingredients
2 x 200g [7oz] ocean trout fillets 1 x Cup of flat leaf parsley, roughly chopped 1 x Cup mint leaves, roughly chopped ½ Cup basil, roughly chopped 1 x Garlic clove crushed 1/3 Cup olive oil 1 x tbsp Dijon mustard 1 x tbsp Salted capers, washed and chopped 4 x Potatoes, sliced Olive oil for brushing Directions
Pre heat a pan to medium-high heat. Combine in a bowl the parsley, mint, basil, garlic, oil, mustard and capers. Brush the potatoes slices with oil and cook in the pre-heated pan for 5 mins each side until golden brown. Brush the fish fillets with oil and cook for 3-4 mins each side. Serve the fish on a plate with the potatoes and the green sauce. Tips: Cook the fish to medium rare; squeeze lemon juice over the salmon just before you take it out the pan, use juices for this dish.
