Ocean Trout with Rustic Green Sauce

Ingredients

  • 2 x 200g [7oz] ocean trout fillets
  • 1 x Cup of flat leaf parsley, roughly chopped
  • 1 x Cup mint leaves, roughly chopped
  • ½ Cup basil, roughly chopped
  • 1 x Garlic clove crushed
  • 1/3 Cup olive oil
  • 1 x tbsp Dijon mustard
  • 1 x tbsp Salted capers, washed and chopped
  • 4 x Potatoes, sliced
  • Olive oil for brushing
  • Directions

  • Pre heat a pan to medium-high heat.
  • Combine in a bowl the parsley, mint, basil, garlic, oil, mustard and capers.
  • Brush the potatoes slices with oil and cook in the pre-heated pan for 5 mins each side until golden brown.
  • Brush the fish fillets with oil and cook for 3-4 mins each side.
  • Serve the fish on a plate with the potatoes and the green sauce.
  • Tips: Cook the fish to medium rare; squeeze lemon juice over the salmon just before you take it out the pan, use juices for this dish.
