Sticky Date Pudding

Ingredients

  • 250g Pitted dates, chopped
  • 90g Butter, softened
  • 2/3 Cup lightly packed brown sugar
  • 2 Eggs lightly beaten
  • 2 tbsp Golden syrup
  • 1 tsp Vanilla essence
  • 1¼ Cup self raising flour
  • 1 tsp Bi carb soda
  • Whipped cream to serve
  • Caramel sauce to serve
  • Directions

  • Preheat the oven to 180°C (190°C fan forced).
  • Lightly grease a 6 hole 1 cup capacity muffin tray.
  • Place dates and ½ cup boiling water in a small bowl and soak for 30 minutes.
  • Remove the water then lightly mash the dates using a fork.
  • Using an electric mixer, beat in butter, vanilla and syrup in a seperate bowl.
  • Sift flour with baking soda over the butter mixture, then stir and combine. Stir in dates.
  • Spoon mixture evenly into the muffin tray.
  • Bake for 20 - 25 minutes, until puddings are risen and firm.
  • Cool in tray for 5 minutes, then turn puddings over onto serving plates.
  • Dollop with cream and caramel sauce.
