Here is the winning entry in our Glem Bi-Energy Gas-Electric Oven Competition. Congratulations to Tania Serovski on her winning entry, the Cup A Cino Pizza!

Cup A Cino Pizza is my very own creation – a sweet pizza in a mug – made for my mum who wouldn’t eat normal pizza. The pizza base must be cooked in an electric fan-forced oven to get the perfect crispness to the base as it cooks in the mug.

Chocolate Pizza Dough Recipe

  • 1 cup water
  • 1 tsp. olive oil
  • 1 Tbsp. melted butter
  • 2 ½ cups plain flour
  • ½ tsp. salt
  • 7g sachet yeast
  • 50g chocolate hazelnut spread (such as Nutella) or if nut allergy use cocoa powder and 1 tbsp butter.

Place ingredients in your bread machine or food processor with dough hook and knead until elastic. Pre-heat your oven to 400 degrees F. Turn out onto a lightly floured surface and knead pizza dough for several minutes. Allow to rise for 30 mins then knock down. Stretch or roll dough out into 4 rounds and place into 4 large oiled mugs ensure it hangs slightly over the top. Bake 8 minutes or until crust is lightly browned. Remove from oven and cool.

Cappuccino Mix

  • Cino topping
  • 250g Cream Cheese, softened
  • 1/2 cup caster sugar
  • 2 tablespoons double shot espresso coffee or coffee liqueur, e.g. Kahlua
  • 1.5 teaspoons gelatine, dissolved in 30ml boiling water
  • 1 teaspoon instant coffee, dissolved in 1 tsp boiling water
  • 1 cup cream, lightly whipped

Beat cream cheese and sugar until smooth. Add the coffee/ liqueur, gelatine mixture and instant coffee mixture and beat until well combined, then fold in cream. Pour into a jug and refrigerate for 2 hours.

Cream Cheese Topping

  • 150g mascarpone cheese
  • 1 tbsp caster sugar
  • 1 tsp vanilla

Fold vanilla and sugar through mascarpone.

Assembly

Place Coffee mixture in piping bag with large nozzle and pipe into base. Place cheese mixture in piping bag with large nozzle and pipe onto coffee mixture. Serve with chocolate coffee bean garnish.
