Create a cracking combo of potato wedges with sour cream & sweet chilli – Homemade snacks, made easy!

Homemade food doesn’t always mean slaving over a stove for hours to create an epic dish to feed the whole family. In this four part series of recipes, BRAEDON GOOD offers you some tastey recipe ideas you can quickly rustle up for yourself.
2. Potato Wedges with Sour Cream & Sweet Chilli Recipe
This recipe is not only a well-loved classic, it’s simple, delicious and cheap as chips to make. The combo can be served alone or as a side to almost any main dish.
Ingredients
Potato Wedges
- 750g Red Delight Potatoes
- Salt
- Pepper
- Fresh Rosemary
- Olive Oil
Sweet Chilli Sauce (Will make a whole bottle)
- 2 Red Chillies
- 3 Garlic Cloves
- 3 Cups White Vinegar
- 3 Cups Caster Sugar
Method
Potato wedges
- Preheat your oven to 200°C and bring a large pot of water to boil.
- Cut washed and unpeeled potatoes into large, even wedges and add to boiled water.
- Partially boil potatoes for approx. 8 minutes.
- Drain in a colander and place potatoes on a large baking tray, evenly spread and toss in a mixture of olive oil, salt, pepper and rosemary.
- Cook for roughly 30 minutes, until golden and crispy.
- Serve with a dip of sweet chilli and sour cream, topped with chopped chives.
Sweet Chilli Sauce
- Chop the chillies and place them in a food processor with the garlic and 1 cup of white vinegar. Process until this creates a finely chopped mixture.
- Place this mixture in a saucepan with the caster sugar and remaining 2 cups of vinegar.
- Cook and stir until sugar is full dissolved in the mixture.
- Bring the mixture to a boil and then back down to a simmer for 30 minutes or until the sauce begins to thicken.
- Bottle up the sauce once it cools down and it will ready to be enjoy.
