The easiest ANZAC biscuit recipe ever

Butter, sugar and syrup. Sounds good.

Sometimes the finest things in life are the simplest, like my Mum’s ANZAC biscuit recipe.

As with most things she does in the kitchen, it is straightforward and delicious.

ANZAC biscuit recipe

What you’ll need:

130 grams of butter

2 tablespoons of golden syrup

120 grams of sugar

120 grams of flour

1 cup of rolled oats

120 grams of desiccated coconut

1 teaspoon of baking powder.

What you’ll do:

Melt the butter and add the syrup and sugar.

Mix the rest in.

Spoon onto an oven tray and pop ’em in for 15 minutes at 160 degrees.

UPDATE: The earlier version of this recipe had omitted the rolled oats. Sorry about that, sometimes the most obvious things are sometimes overlooked!

What’s ANZAC Day?

ANZAC stands for Australia New Zealand Army Corps. The 25th of April commemorates the day from World War One in 1915 when these soldiers landed in Gallipoli, modern day Turkey.

The allied troops set out to capture the peninsula but were dropped off on a beach with a tremendous strategic disadvantage. Over 11,000 Australians and New Zealanders were killed in a battle which lasted 8 months.

The 25th of April was officially named ANZAC Day in 1916, being marked by a series of ceremonies and marches through Europe and the Tasman.

Today, it is commemorated from towns small and large with a dawn service followed by a ceremony later in the day.

Poppies are usually worn in November to salute the memory of those who sacrificed their lives. It was a flower which bloomed in the trenches and craters of war zones, including Gallipoli in the spring.

 

Having once had to sit on the washing machine to stop it from bouncing into oblivion, Keri is today delighted with the new (smoother running) technologies that make housework easier every day. A self-confessed lazy-bones, Keri seeks out quirky inventions that ease the human workload, such as the robotic vacuum cleaner (wow). And as soon as someone figures out a Jetsons-like self-cleaning house, she will happily lay her pen to rest and retire from appliance journalism. Until then, her pick is a fridge that will tell her smartphone when it's time to pick up more beer on the way home. Magic.

    There are obviously oats in the anzac biscuits pictured, but none in the recipe ???

    Very true, Mashly! I actually asked my Mum for this recipe and was waiting for ANZAC day to actually try it out, having never made them myself before. As for the photo, this is a generic picture and yes you’re right, the biscuits pictured have oats where the recipe does not. If my ANZAC biscuits turn out OK I’ll be sure to throw a picture up online….Do you have a favourite recipe?

    That sounds much better, cant have an Anzac bikkie without oats…lol
