Treat yourself with this Thai Pumpkin Soup Recipe that our Customer Service Manager, Sally, was given by a friend this week.  She gives it two thumbs up!

Thai Pumpkin Soup Recipe

Ingredients:

  • 2-3 tbs peanut oil (I used olive)
  • 1 medium onion chopped
  • 2 cloves of garlic chopped
  • 1 tsp of grated ginger (out of the jar)
  • 2 – 4 tsp red thai curry paste
  • 1kg pumpkin peeled and cubed
  • 3 cups of chicken stock
  • 1 x 150g can coconut cream
  • lime juice
  • coriander leaves for garnishing

Method:

Heat oil, add onion, garlic, ginger and curry paste and stir fry until
fragrant. Add pumpkin and chicken stock, boil and simmer for about 25
minutes.  Blend soup.  Add coconut cream and lime juice reheat and serve.

With the addition of prawns or chicken, this Thai Pumpkin Soup Recipe becomes a main meal in itself.
