Ceasar Salad

Ingredients
- 1 tsp Dijon mustard
- 2 tbsp Lemon juice
- 1 Egg
- 125ml Olive oil
- 3 tbsp Grated parmesan
- 2 Boiled eggs
- 3 Slices of sourdough bread [chopped]
- 3 Rashers bacon [sliced]
- 2 Cos [Romaine] lettuces
- 8-9 Anchovies
- Salt and ground black pepper

Directions
Whisk together 1 tsp Dijon mustard, 2 tbsp lemon juice and 1 egg. Slowly add 125ml olive oil, whisking constantly. Stir though 3 tbsp grated parmesan cheese and season with sea salt and the pepper.
Boil 2 eggs for 5-6 mins.
Remove the crusts from 3 sourdough bread rolls and chop into rough 1 cm squares.
Put 4 tbsp oil in a frying pan and fry 3 rashes of bacon until crispy. Drain on paper towel.
Add the bread to the oil and cook till golden brown.
Roughly chop the heart of the lettuce and put onto a service platter. Shell and quarter the eggs. Add the eggs, bacon, fried bread and finely chopped anchovies to the platter. Drizzle with dressing
Tips: You could also cook off thin strips of chicken and place on top.
