Ceasar Salad

Ingredients

  • 1 tsp Dijon mustard
  • 2 tbsp Lemon juice
  • 1 Egg
  • 125ml Olive oil
  • 3 tbsp Grated parmesan
  • 2 Boiled eggs
  • 3 Slices of sourdough bread [chopped]
  • 3 Rashers bacon [sliced]
  • 2 Cos [Romaine] lettuces
  • 8-9 Anchovies
  • Salt and ground black pepper
  • Directions

  • Whisk together 1 tsp Dijon mustard, 2 tbsp lemon juice and 1 egg. Slowly add 125ml olive oil, whisking constantly. Stir though 3 tbsp grated parmesan cheese and season with sea salt and the pepper.
  • Boil 2 eggs for 5-6 mins.
  • Remove the crusts from 3 sourdough bread rolls and chop into rough 1 cm squares.
  • Put 4 tbsp oil in a frying pan and fry 3 rashes of bacon until crispy. Drain on paper towel.
  • Add the bread to the oil and cook till golden brown.
  • Roughly chop the heart of the lettuce and put onto a service platter. Shell and quarter the eggs. Add the eggs, bacon, fried bread and finely chopped anchovies to the platter. Drizzle with dressing
  • Tips: You could also cook off thin strips of chicken and place on top.
