| Bitter Sweet Chocolate Mousse, White Chocolate Flakes Serves 4 Preperation Time 5 mins Fridge Time 2 hours Ingredients 100g Dark 70% couverture 10g Butter 2 Egg yolks 2 Egg whites 15g Sugar Directions To make the mousse, boil a large pan of water, place the couverture in a metal mixing bowl and place the bowl over the boiling water untill melted. Then slowly fold in the butter. Cream the egg yolk. Meringue egg whites and sugar until they reach a soft peak form. Then fold the egg yolk and meringue together, then slowly fold in the chocolate. Set in cocktail glasses. Place in the fridge for 2 hours. To serve, remove from the fridge and peel a bar of white chocolate on top of the glasses using potato peeler for garnish. |
