Bitter Sweet Chocolate Mousse, White Chocolate Flakes

Ingredients

  • 100g Dark 70% couverture
  • 10g Butter
  • 2 Egg yolks
  • 2 Egg whites
  • 15g Sugar
  • Directions

  • To make the mousse, boil a large pan of water, place the couverture in a metal mixing bowl and place the bowl over the boiling water untill melted. Then slowly fold in the butter.
  • Cream the egg yolk.
  • Meringue egg whites and sugar until they reach a soft peak form.
  • Then fold the egg yolk and meringue together, then slowly fold in the chocolate.
  • Set in cocktail glasses.
  • Place in the fridge for 2 hours.
  • To serve, remove from the fridge and peel a bar of white chocolate on top of the glasses using potato peeler for garnish.
