Prosciutto and baked eggs muffins for mums anywhere, anytime

Don’t panic, we haven’t got confused by celebrating Mother’s Day a week late.
No, it’s just that here at Appliances Online we like to celebrate our mums all year round.
Just because the ‘special day’ has been and past doesn’t mean breakfast in bed, or a relaxing brunch in honour of mum, has to relegated to only once a year.
Anyone can whip up this gourmet little dish, and everything from preparation, to cooking, to clean up is a breeze.
Ingredients:
- 12 slices prosciutto
- 3 large eggs
- 1 cup pouring cream
- 1/4 freshly grated parmesan cheese
- 1/8 cup of torn up basil leaves
- Salt and Pepper
Method:
- Preheat your oven to 180°C fan forced.
- Lightly grease base and sides of muffin tray.
- Line with even slices of prosciutto.
- Whisk together a mixture of eggs, cream, basil, salt and pepper.
- Pour mixture into the prosciutto moulds.
- Sprinkle parmesan evenly over each muffin.
- Bake for roughly 10 minutes or until the top is crispy and golden.
For a delicious pairing serve with fresh and buttered toast, and complete perfectly with a cup of coffee.
This dish will impress mum, or anyone else for that matter, and you’ll have everything cleaned up very quickly for her as well.
