Fast delicious recipes that can easily be cooked in your microwave

We’re living in the era of fast paced lives, which usually means people are opting for faster meal options. Now when we think of ‘fast food’ we usually always think of certain franchised restaurants that maybe easy to obtain, but not so easy on your waist line.  With these great microwave recipes, ‘fast food’ no longer has to be the thought of unhealthy eating.

Start your day with a snap 

 

Strawberry & Buckwheat Breakfast Bowl Serves: 1

Ingredients:

  • 1/4 cup oat bran
  • 2 Tbsp oat flour
  • 2 Tbsp buckwheat groats
  • 1 Tbsp ground flaxseed
  • 1/2 tsp baking powder
  • pinch salt
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla
  • 2 Tbsp unsweetened applesauce
  • 1/4 cup almond milk
  • 1/2 cup fresh strawberries, diced

Directions:

  1. Mix together the oat bran, oat flour, buckwheat groats, flaxseed, baking powder, salt, and cinnamon.
  2. Stir in the vanilla, applesauce, and almond milk until all the dry ingredients are incorporated. Gently fold in the diced strawberries.
  3. Spray a microwave safe baking dish or ramekin, and pour batter into dish.
  4. Heat for 1 minute and 30 seconds or until the top is set.
  5. Let cool for 2-3 minutes.

 

The Perfect Poached Egg

Ingredients:

  • Eggs- Depending on how many you want will determine how many eggs you will need
  • 1 tsp salt
  • ½ tsp cider vinegar

Directions:

  1. Run the hot water tap until water is as hot as it can go.
  2. Fill a microwave safe bowl with the hot water. (Cereal bowl size)
  3. Add the salt and the cider vinegar to the water.
  4. Carefully place the bowl right in front of your open microwave. (or as close as you can get it)
  5.  Slowly crack an egg into the bowl.
  6. Place the bowl as quickly and safely as you can into the microwave, and cook on high for 2 ½ – 3 minutes.

The cooking time will vary depending on the temperature of the water, and how much water is being used.

Four-Minute Corn on the Cob

Ingredients:

  • Fresh corn still in their husks- Depending on how much corn you want to make will determine how much corn you need

Directions:

  1. Cut both ends of the corn with a sharp knife
  2. Place the corn in the husks straight into the microwave. (The husks will protect the corn so plates or paper towels are not needed)
  3. Cook on high for 4 minutes
  4. Let the corn cool for about 1 minute before carefully taking them out.

 

Easy egg-stuffed pepper

Ingredients:

  • 2 eggs
  • A dash of milk
  • A large pepper (preferably yellow)
  • Seasoning and cheese (optional)

Directions:

  1. When selecting your pepper, make sure you choose one with a good sturdy bottom that will stand up unassisted. Yellow ones are usually best for this.
  2. Cut open your pepper at the top, around the stalk. Be careful. You should be able to just lift the stalk out with a clump of seeds attached to it and be left with a pepper-cup. Fish out any remaining seeds.
  3. Put the pepper in the microwave on low power for a few minutes. This is to warm it up before the egg goes in, so the egg doesn’t take as long.
  4. While the pepper is microwaving, beat up two eggs in a jug. A jug is good because you’re going to have to do some pouring but if you don’t have a jug a cup would be fine. Add a dash of milk for fluffiness. Add grated cheese if you want (although I find that that makes it a bit too oily). Or add seasoning. I like tarragon, turmeric and paprika with eggs, or Italian mixed herbs with black pepper. Or worchestershire sauce. And a pinch of salt. Anyway, mix it up really well.
  5. Get the pepper out of the microwave and pour your egg mixture into it. It is probably a good idea to put it on a plate at this point. The pepper shouldn’t actually leak any egg out, unless you’ve been very cavalier with the knife, but better safe than sorry. Immediately rinse your jug out so it doesn’t turn into proper washing up later.
  6. Cook it on low power for about three minutes. Don’t be scared if the egg starts to rise out of the pepper in a big column -it won’t topple over and this is just a sign that it is nearly ready. When you take it out, make sure it really is ready by stabbing a fork into the top. The top will cook faster than the middle so it might appear cooked while still having wet egg in the middle. But if you stab it with a fork you should be able to tell.
  7. After having established that it really is cooked, you may eat it.

Meatloaf in a Mug Serves: 1

Ingredients:

  • 2 tablespoons lite milk
  • 1 tablespoon ketchup
  • 2 tablespoons quick-cooking oats
  • 1 teaspoon onion soup mix
  • 113g lean ground beef

Directions:

  1. In a small bowl, combine the milk, ketchup, oats and soup mix. Crumble beef over mixture and mix well. Pat into a microwave-safe mug or custard cup coated with cooking spray.
  2. Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain.
  3. Let stand for 3 minutes. Serve with additional ketchup if desired.

 

Quick Spicy Salmon Serves: 1

Ingredients:

  • 1 – single portion salmon filet
  • salt and pepper
  • 2 tablespoons mayonnaise
  • 1-2 tablespoons sriracha sauce
  • 2-3 fresh cut lemon slices
  • 1 tablespoon parsley

Directions:

  1. Rinse salmon filet with cold water and pat dry.
  2. Place the salmon skin side down in a microwave save container. Season the salmon with salt and pepper. Set aside.
  3. In a small bowl, combine mayonnaise and sriracha sauce.
  4. Generously spread the mayonnaise mixture on top of the fillet. Add lemon slices and parsley.
  5. Cover the dish tightly with microwave safe plastic wrap.
  6. Microwave the fish for 3.5 minutes. Check the center of the filet for doneness with a fork. If there is any uncooked fish, microwave for another 30-45 seconds.
  7. Garnish with additional parsley and lemon wedges.

Something sweet

 

Brownie for 1 Serves: 1

Ingredients:

  • 3 tbsp Unsweetened Cocoa Powder
  • 1/4 cup Unsweetened Applesauce
  • 1/4 tsp Baking Powder
  • Pinch of Salt
  • 1 tsp Vanilla
  • 1 tbsp Maple Syrup

Directions:

  1. Add all ingredients to a microwave safe mug
  2. Cook for 1 minute and then cook for 30 second intervals or until your brownie is cooked.
  3. Serve warm or allow to cool.

 

Minute microwave cheese cake Serves: 1

Ingredients:

  • 57 grams cream cheese, softened
  • 2 Tbsp sour cream
  • 1 egg
  • ½ tsp lemon juice
  • ¼ tsp vanilla
  • 2-4 Tbsp sugar replacement sub (taste as you go)

Directions:

  1. Mix all ingredients thoroughly in a microwave-safe bowl.
  2. Cook on high heat for 90 seconds, stirring every 30 seconds incorporating all ingredients.
  3. Refrigerate until serving.
  4. Optional: Top with fresh fruit, whipped cream and nut meal.

All these recipes are perfect for those who want ‘fast food’ without the added kilos, or even for students who may only have access to a microwave.
