| Banana and Cinnamon Tea Cake Serves 8 Preperation Time 10 mins Cooking Time 50 mins Ingredients 180g Butter 90g Brown sugar 3 Eggs 125g Self raising flour 1 tsp of Ground cinnamon 125ml Milk 2 Firm but ripe bananas 1 tsp Ground cinnamon 50g Caster sugar Directions Pre heat oven to 180°C. Whisk softened butter and sugar in large mixing bowl until light and creamy. Add the eggs, one at a time, beating well each time. Sift flour and cinnamon together and fold into the egg mixture, and then gradually pour in the milk while stirring. Grease and line with baking paper a 30cm log or a 20cm spring form tin. Pour the batter into the baking tray. Quarter the the bananas length ways. Slice and arrange the banana on top of the batter. Mix together the cinnamon and the sugar and sprinkle over the cake. Bake for 30-40 minutes for the log, or 45-55 minutes for the spring form tin. Allow to cool in the tin, and serve. |
