Banana and Cinnamon Tea Cake

Ingredients

  • 180g Butter
  • 90g Brown sugar
  • 3 Eggs
  • 125g Self raising flour
  • 1 tsp of Ground cinnamon
  • 125ml Milk
  • 2 Firm but ripe bananas
  • 1 tsp Ground cinnamon
  • 50g Caster sugar
  • Directions

  • Pre heat oven to 180°C.
  • Whisk softened butter and sugar in large mixing bowl until light and creamy.
  • Add the eggs, one at a time, beating well each time.
  • Sift flour and cinnamon together and fold into the egg mixture, and then gradually pour in the milk while stirring.
  • Grease and line with baking paper a 30cm log or a 20cm spring form tin. Pour the batter into the baking tray.
  • Quarter the the bananas length ways. Slice and arrange the banana on top of the batter.
  • Mix together the cinnamon and the sugar and sprinkle over the cake.
  • Bake for 30-40 minutes for the log, or 45-55 minutes for the spring form tin.
  • Allow to cool in the tin, and serve.
